I rent the block of land beside our place. That is my gym fees, and the garden is my gym. I grow my own organically grown vegetables in the clean country air and river water.
These photos show my past week of exercise which was emptying the compost to create the new late autumn and winter maturing produce garden.
The Veggie Guide.
Those picked vegetables are today's harvest. My goal is to harvest five different vegetables to be eaten within an hour of picking.
Today, I was showing off. :-) There is chives, rosemary, kale, silverbeet, shallots, spring onions, eggplant, zucchini, French beans, squash, carrots, black Russian tomatoes, red tomatoes and okra in this picking.
I have already eaten dessert, a few fresh strawberries, sweet, straight from the plant.
Louisiana gumbo for dinner.
If you do flour, it will work, if you don't it will still be good but you can't call it gumbo.
Mix equal parts of flour and oil in the bottom of a heavy pan and cook VERY slowly for a long time, stirring frequently, until it turns caramel brown. Toss in chopped okra and regular onion (save the spring for nearer the end) and "fry" until starting to brown, then toss in chopped tomatoes, celery and sweet pepper if you have it, maybe some zucchini (especially if you don't have meat), and stew for a while.
Season with garlic, salt and pepper, a bit of oregano, and hot pepper (preferably tobasco sauce or other pepper sauce, but in the absence of that, add hot pepper and a dash of vinegar). Serve with rice. Even better the second day. And if you do meat, cajun sausage, chicken, and shrimp are great additions. If not, consider some red beans or white.
It's all about the roux, as they say! (Roux is the flour/oil mix at the beginning) I forgot to mention the stock!
