One of the most difficult things about travelling in the outback is eating a healthy variety of fresh vegetables. Green leafy vegetables are generally wilted and expensive, if you can even get them. The conditions aren't always conducive to growing your own.
There is a way to get a feed of delicious fresh greens within a couple of weeks, and a continuing harvest after that.
Forgent about those branded packets of peas sold an nursery gardens, go to the supermarket in a large town and purchase the large packets of dried peas sold for pea soup. Just don't get split peas.
I met an old bushman, he had some good stories from his croc hunting up the top end, the only fresh veg they could rely upon was the humble pea spout, he always carried a bag of dried peas everywhere!
I eat them raw but you can add to stir fries and salads of course. Never thought of steaming them.
